Inaugural Dinner of the Bailliage of Perak

Great news for gourmets in Perak!  In June 2013 the Bailliage of Perak of the Chaîne des Rôtisseurs was inaugurated at the Banjaran Hotsprings Retreat in Tambun (Ipoh) by Datuk Dr J S Sambhi, Member of the Conseil Magistral, Bailli Délégué of Malaysia.

Perak joins the existing local Bailliages in Putra Jaya, Kuala Lumpur, Penang, Malacca, Kuching and Sabah.

The new Bailli is Elizabeth Lee, Senior Executive Director of Sunway University and Sunway Education Group. Together with her Council of six other office-bearers, she will be leading the Bailliage to new heights with several gastronomic dinners and activities planned.

The Banjaran Hotsprings Retreat is renowned for its serene, breath-taking tropical setting. Beside the hot spring, which is nestled amongst the green limestone hills, some 50 members and guests from our Penang, Kuala Lumpur, and Malacca Chapters enjoyed an aperitif of De Bertoli Rococo Blanc de blancs Australian sparkling wine together with an array of tempting canapés.

Spectacular in all senses, this very first dinner was held at the Pomelo Restaurant at the Retreat itself.  Built by Sunway, it was quite apt to have Le Cordon Bleu Malaysia – Sunway Institute of Culinary Arts team of chefs and students – to present the dinner on this auspicious occasion.

Chef David William Morris, who was joined by the Malaysian team from Le Cordon Bleu London, led the culinary feat.  The theme of the menu he shared with us was chosen to impart the latest eating trend in London, whereby seasoning of the dishes comes from the ingredients used. Neither salt nor pepper was used for flavouring the dishes.

This concept was a very courageous move indeed as Malaysians are used to strong spices which form an integral part of their cuisine. Nevertheless we were all pleasantly surprised with the distinctive natural taste of the ingredients used. Great culinary techniques and well-paired wines ensured that the dinner was one of a kind and a wonderful inauguration for the Chaîne in Perak.
