Bailliage of Bordelais

A dozen enthusiastic members participated in a lunch honouring the end of an era blessed for gastronomy in Saint Emilion. The Logis de la Cadène, where several generations of the Mouliérac family have been acclaimed for fame and longevity, is changing owners.

As it should be the spatchcocked pigeon grilled over the embers of vine twigs was treated with due honours. It reminded us of the chef’s unforgettable creations enjoyed during our previous visits to this mecca of Gironde home cooking. The sirloin of beef with fresh shallots, the veal with Bordeaux-style hash-browns, the pig's trotters in Saint-Emilion wine … deliciously sublime!
