Young chefs on the way up

At the 2013 National Final of the Jeunes Chefs Rôtisseurs Competition held at the prestigious École Hôtelière de Lausanne, eight young culinary talents were under pressure to perform at their highest level.

With the customary secret basket of ingredients presented only a few minutes before the start of the competition, the competitors had 30 minutes to decide on their menu. In a thrilling, very exciting competition, the young chefs were working against the clock to prepare their three-course menu for judging.

The jury of professional and amateur members assessed the dishes. Reviewing the outcome the judges were unanimous in commenting on the exceptionally high standard achieved by the young chefs.

Competitors in 2013
This year’s eight young chefs competed for the Bailliage of Switzerland’s Victorinox Trophy. The winner of the trophy was Fabio Toffolon of Schöngrün Restaurants in Berne.

The Runner-up was Filipe Pinheiro Fonzeca from Benîit Violier’s Restaurant de l'Hôtel de Ville at Crissier and in Third Place was Stefanie Siegenthaler from the Congress Hotel Sea Park at Thun. All competitors received a diploma. The three prize-winners were each presented with a cash prize, Gold, Silver and Bronze medals respectively, as well as gifts generously provided by the sponsors.

International participation
Fabio Toffolon will now represent the Bailliage of Switzerland at the 2014 International Final being held in Durban, South Africa.

A stage on the road to success
Fabian Inderbitzin is a good example of a successful way to the top. Winner of the National Final held in Lucerne in 2001, he went on to come a creditable fourth in the 2002 International Final held in Singapore. Today, he is a Michelin-starred Executive Chef at the lakeside restaurant Belvédère Hergiswil with 16 points Gault & Millau.
