Bailliage of Toronto

The Bailliage held its Chapitre at the InterContinental Toronto Yorkville. During the Induction Ceremony presided over by Bailli Délégué David Tetrault in his capacity as a Member of the Conseil d’Administration, five new members were welcomed and four promotions were performed, including Jason Clarke to be Bailli of Toronto and Scott Riess becoming Bailli Provincial of Ontario. Retiring Bailli Provincial Klaus Tenter was honoured with the Bailliage of Canada Silver Star for his service and Dr. William Santo was recognized for his 30 years of membership and contribution to the Chaîne.

The hotel’s General Manager, Simon Antoine (Vice-Conseiller Culinaire Honoraire) and his very capable team pulled out all the stops. The evening started in traditional Chaîne fashion with sparkling beverages for all. Wonderful hors d'oeuvres were passed but the highlights of the cocktail element of the evening’s programme were the food stations, particularly the braised rabbit and carrot purée..... what a great sense of humour!

Once seated for the dinner we commenced with black cod accompanied by a 2010 Chablis. This was followed by duck au vin with a 2012 Louis :Latour Bourgogne Pinot Noir ... a delicious combination! To neutralize the palate after the richness of the duck, a goat cheese, beet and lemongrass sorbet was served with a shot of Grey Goose pear vodka. Now the group was ready for the main course.

La Confrérie de la Chaîne des Rôtisseurs … the key word being ‘Rôtisseurs’ Rarely do Chaîne events feature spit-roasted proteins but this was one of those rare occasions. The spit roasted Ontario lamb was paraded through the room like Cleopatra on a litter. Rightfully so  as this was something to be celebrated by a gastronomic society with roots going back to the goose roasters.

The menu concluded with a trio of French cheeses (Bleu d’Auvergne, Édel de Cléron, Chabichou du Poitou) and Valrhona chocolate soufflé with Rémy Martin Cognac flavoured crème anglaise.
