Fine flavours, perfect prelude, hint of mystery … result: sublime dining experience!

For our last event of the year we returned to one of Perth's favourite fine dining restaurants, Friends in the Hyatt Centre, a Chaîne member restaurant for 10 years.  Members and guests were hosted by restaurant owners Clyde and Lesley Bevan, long-term supporters of the Chaîne.

Mumm Cordon Rouge NV Champagne was served on arrival. With its fine flavours it was the perfect prelude giving a hint of the special evening to come.

The first course of cider and onion soup with pickled truffle was matched by the citrus and mineral palate of the Zarepath Porongorup Riesling 2011. Moving on an Evoi Reserve Margaret River 2011 Chardonnay with its rich, textured and complex palate with a hint of lemon was a good match for the warm scallop tart with beetroot, shallot and bacon marmalade drizzled with fresh herb oil.  Of particular note was the layering of carpaccio-thin slices of scallop.

During the rack of lamb main course, diners were challenged with a mystery wine competition which only one person guessed correctly to win the prize: a superb 2003 Cullen Diana Madeline Cabernet Sauvignon biodynamic wine from the Wilyabrup region of Western Australia. This wine, which sells for up to 500 dollars a bottle in East Coast restaurants, had the characteristic blackcurrant and black cherry flavours with hints of tobacco, violet, dark chocolate and the signature peppermint notes of the region. A privilege to experience!

The impressive desert of date souffle and roasted cinnamon ice cream was paired with Moss Wood Ribbon Vale Vineyard Botrytis Semillion 2011. Its rich syrupy characters, pear, fig and dried apricot flavours and surprisingly light finish accompanied the dessert which delighted everyone.

Espresso and petits fours were accompanied by the bolder Talijancich Swan Valley Pedro Ximinez Liqueur. This fortified wine had rich burnt toffee, raisin and caramel flavours that stood up against and enhanced the chocolate flavours of the petits fours.

The food and wine combinations were a delight!

During the evening, Bailli Wayne Teo announced the winner of the Bailliage of Western Australia’s inaugural ‘Function of the Year Award’, which was won by Bistro Guillaume.

At the end of the dinner, Head Chef Frederic Verschoore, who has cooked in restaurants around the world including at the Michelin 3-star Troisgros in France, was presented to diners and answered questions from the floor.

The fine dining was complemented by a talented Freddie Mercury impersonator whose selection of Queen songs were crowd favourites, leading to many diners taking to the dance floor. Even after the live entertainment had ended, some Chaîne members and their guests enjoyed the camaraderie so much that they lingered on. Chevalier David Irvine even provided some impromptu after-party entertainment on the baby grand piano in the restaurant!
