Bailliage of St Gall Hunters’ Dinner with the National Bailliage of Liechtenstein

On a mild autumn evening 50 members of the local Bailliage of St Gall and the national Bailliage of Liechtenstein gathered for a refreshing aperitif in the picturesque garden of the Restaurant Schlüssel in Mels. The centrepiece of the gathering was a fire which both warmed the group and created a wonderful atmosphere.



Bailli Jacques Sinz personally greeted everyone with a warm welcome. He of course made special mention of our ‘international’ visitors … i.e. our very good Chaîne friends from a few kilometres across the border in the Principality of Liechtenstein.



The Hunters’ themed dinner got off to an excellent start with Maître Rôtisseur Seppi Kalberer and his team surprising us with a course entitled ‘Baby wild delicacies / Game from the Schwarzsee (near Kitzbühl)’. It comprised tasters of special culinary treats, namely sweet and sour heart, kidney with lavender polenta, cannelloni with hot peppers and chanterelle cream soup.



The rest of the menu continued to tease the taste buds. Each new delight met with increased enthusiasm from the dinner group. All the ingredients, such as the venison to which the fine quince terrine was well suited, were sourced from the region. Other highlights included an innovative ‘hamburger’ as well as a baby deer with its side dishes. After that, we were spoiled by a pre-dessert and then a similarly seasonal dessert featuring pears and plums.



When the kitchen and service brigades, respectively under the expert guidance of Maître Rôtisseur Seppi Kalberer and Marianne Blum, were presented thunderous applause greeted them. After another successful evening everyone quite contentedly went on their way home.
