Young chefs and young sommeliers compete in the Bailliage's 2014 National Finals

In mid-January Finland’s best young chefs and sommeliers gathered in Jyväskylä to compete the National Finals of the Jeunes Chefs Rôtisseurs and Jeunes Sommeliers Competitions.

After an intense day for competitors and judges alike, Roope Kotila from the Bailliage of Lapland was declared the best young chef for 2014. He will now represent the Bailliage of Finland at the International Final being held in Durban in September.

Kata Shecter from the Bailliage of Kuopio was awarded First Place in the Jeunes Sommeliers Competition. She will represent the National Bailliage at the International Final in Copenhagen also being held in September.

The young chefs were as usual challenged to make an outstanding three-course menu from a pre-determined selection of ingredients: the so-called ‘black box’. The first course had to use salmon, the principal ingredient to be used for the main course was chicken, including the skin, and the dessert needed to include apple, orange and raspberries.

For next three hours the young chefs worked intensively to create impressive and tasty dishes. The atmosphere and co-operation in the kitchen remained good although everyone was in competition to win.

The Director of the Competition, Conseiller Culinaire Martti Lehtinen, was very pleased that, although the main ingredients were quite basic, the young chefs aimed high in planning their menus and succeeded in turning the planning into reality.

In a close run competition, Roope Kotila’s sauce successfully complementing the taste of the chicken main course made the difference in the scoring. The Runner-up was awarded to Ville Neulanen and Third Place went to Harri Mattinen.

The standard of the six young sommeliers taking part was very high. Kata Shecter eventually winning over Runner-up Pekka Rantala. Third place was awarded to Matti Kuukkanen.

Head Judge Échanson Loretta Pietilä commented that on the day challenging for the top places came down to those who could stay focused and perform well under pressure.

The Bailliage of Finland has great belief in the concept of its young people competing. Accordingly it organises National Jeunes Chefs Rôtisseurs and Jeunes Sommeliers Competitions every year. In 2015 the National Finals will be held in Lapland.
