Bailliage of Cancun

The first dinner of the year for the Bailliage of Cancun was held in Le Basilic, the award-winning French-Mediterranean themed restaurant of the Fiesta Americana Grand Coral Beach Cancún Resort & Spa.

Nestled on Cancún's finest stretch of private beach, the Grand Coral Beach offers the best of both worlds with award-winning luxury that transports the soul to pure relaxation, yet equally stimulates given its proximity to the resort’s vibrant culture and entertainment. Beautiful surroundings combined with top-notch service have earned the establishment the prestigious Five Diamond award numerous times.




Executive Chef Henri Charvet was commissioned to delight the members and their guests with a special menu prepared for the occasion.

The six-course dinner comprised:
- Lobster soup with morels
- Foie gras ravioli stuffed with mushrooms and truffle, duck emulsion
- Chilean sea bass with caviar and fricassee of asparagus tips flavoured with coriander
- Roasted Angus beef fillet with black pepper, accompanied by potato gratin
- Chilled apple soup with Calvados
- Henri Charvet’s special chocolate cake dessert with dark chocolate mint sauce


With each course, sight, sound and taste fused together to create a flavourful masterpiece. These were not the only masterpieces though as on the walls hung the ‘art coming to life’ works of Mexican artist Leon Alva creating a wonderful backdrop to the event.
