Great Britain - Vic Laws

Conseiller Culinaire - member of the Chaîne for 22 years

In Her Majesty the Queen’s 2012 New Year Honours List, Conseiller Culinaire Vic Laws was awarded the MBE* for services to the UK hospitality sector.

Professional Career
Vic’s introduction to catering was by his mother who encouraged his love of cooking whilst he was at school. He went on to win a place at Acton Hotel School (now part of University of West London). Here one of his chef instructors was the renowned catering educationalist Victor Ceserani MBE, who further encouraged him in his career.  

His first full-time permanent position was as a trainee manager at the Mount Royal Hotel in Oxford Street part of the then Grand Metropolitan Hotels, but he soon moved into restaurants and catering.

During this phase of his professional career, amongst other appointments he was Director of Flight Catering for Trusthouse Forte and Managing Director of Aramark’s B&I and Leisure companies.

In 1986 finding himself made redundant he, by accident, became involved in consultancy and set up AVL Consultancy based in Woking. In the last 25 years, AVL has worked for over 70 Authorities, many schools, colleges and universities as well as such well-known organisations as Mars, HMRC; QEII Conference Centre; Royal Mail; Royal Aeronautical Society and the Aviva Stadium, Dublin.

Personal background
Vic was born in Harrow, England, in 1942 and is recently widowed from Thelma, who he met when he was consulting for Surrey County Council. He has two daughters one married to a caterer and the other a Chef in London.

The Chaîne
He has been a Chaîne member for 22 years holding the role of Bailli of Thames Valley prior to being appointed Conseiller Culinaire for Great Britain.

'The Clink' Charity
Vic is the Restaurant Ambassador for ‘The Clink’, a public restaurant operating within HM Prison High Down, Sutton. It is dedicated to training prisoners to become chefs and waiters so they have a career when they leave prison and thus are less likely to re-offend.

Associations
Vic is an active participant in many industry associations. For example:

  • Institute of Hospitality: In 1998 Vic was elected Worldwide President and is now Chairman of the pension trustees as well as being a Fellow of the Association.

  • Academy of Culinary Arts: In 2009 Vic was invited to become one of the founding friends of the ACA which is the premier body for Head Chefs, Pastry Chefs and Restaurant Managers in the United Kingdom.
