Exquisite dishes prepared by Chef Philippe Joannes

Bailli Délégué Gérard Canarie and Maître Rôtisseur Patrick Estachy could hardly have dreamed of somewhere more wonderful than the terrace of the Fairmont Monte Carlo to organise the first Dîner Amical of the summer for the Chaîne in the Principality.

Their vision came true on June 28th with invitations sent out to all members and friends. The menu included a range of exquisite dishes prepared by Philippe Joannes, the hotel’s Executive Chef – a Meilleur Ouvrier de France – and made using a selection of local ingredients.



The chef created a coral-coloured cream with baby broad beans and a summery duck foie gras with iced cider. A risotto was served with the fillet of sea bass en viennoise with lemon from Menton, before two desserts made using strawberries, Amarena cherries and chocolate chaud-froid ended this dinner.



We were graced by the presence of singer, composer and guitarist, Marjorie Martinez, accompanied by her band, adding a special something to the evening with her sweetly sensual voice, performing a mix of blues, folk and jazz.



This magnificent evening, which culminated in a firework display, will go down in the annals of Monaco’s Confrérie.

Long live the Chaîne!
