Magnificent rose-themed feast celebrating the Summer Solstice

With proverbial culinary fireworks the Bailliage of Liechtenstein celebrated the Summer Solstice with a dinner under the motto “la vie en rose” (loosely translated into “summertime is rose time”) at Torkel, the restaurant of the Prince of Liechtenstein, in Vaduz.

Over 50 members attended the event. They came from both Liechtenstein and the Bailliage of Bodensee across the border in Switzerland. Because the weather also played along, everyone experienced a thoroughly enjoyable evening on one of Liechtenstein’s most attractive terraces.

The hosts for the evening, Maître Rôtisseur Ivo Berger and his wife Tanja, took over the running of the restaurant from Rolf Berger at the start of the year. This was the first time they had prepared such a major event for the National Bailliage.

The reputation going before them certainly was one of the reasons why so many guests came along. They were not disappointed. Ivo Berger composed a magnificent feast themed on roses and the colour pink.

It began with an iced essence of the “Berner Rose” tomato, continued with a classic duck liver course on a bed of hazelnuts, Öraking salmon on smoked trout foam, a pink-roasted summer buck as the main course, and ended with a rose sorbet floating in Champagne Drappier rosé with rose petal décor.

The courses were accompanied by a fine selection of wines drawn from Torkel’s extensive cellars. The evening was further enhanced by two lyrical singers with keyboard accompaniment.

On behalf of everyone present, Bailli Délégué Daniel Jäggi and Conseiller Gastronomique Dominic Brühwiler expressed thanks for the outstanding performance of the kitchen and service brigades, as well as for the musical accompaniment. The hosts were each presented with a certificate in recognition of this perfectly-organised inaugural event.

Already in their first year at “Torkel” Ivo and Tanja Berger have demonstrated tremendous form. For this reason we are looking forward to further memorable events at the restaurant.
