Summer Flowers theme at ‘Feast’ atop the Sheraton Seoul D Cube City Hotel

For this latest event in the Bailliage of Korea’s calendar, the Sheraton Seoul D Cube City Hotel presented an innovative menu themed on Summer Flowers at ‘Feast’ its signature restaurant situated atop the hotel on the 41st floor.



With its smooth tonal woods and marbles united with artistic pops of green and white for a modern look, the décor is indicative of the restaurant’s commitment to serving fresh, international fare with an innovative twist. Furthermore, decorated with flowers and flower prints on its walls, ‘Feast’ presented itself as the perfect venue for the special occasion.

The atmosphere of the evening was bright and airy with the DJ’s music playing in the background, along with the restaurant’s mesmerizing views of the Seoul nightscape to enjoy.



Executive Chef Hill Lee and Executive Sous Chef Paul Dodd oversaw the seven-course dinner.

MENU

Amuse bouche: crab cocktail, radish, scallop, caviar, avocado and wasabi puree

Foie gras parfait, pickled watermelon, cherries, candied walnuts and bacon

Sea bream, mussels, fennel, tomato and saffron sauce

Veal tenderloin, black garlic puree and edamame

Manchego espuma, chipotle and pickles

Cassis sorbet, champagne granite

Chocolate palette d’or, salted caramel, banana, peanut butter ice cream

Mignardises, coffee and tea



The amuse bouche was the perfect combination to awaken the taste buds. From this promising start, notable courses were the foie gras parfait, the veal tenderloin main course, and a well-balanced cassis sorbet pre-dessert.

To present the perfect match to complement the fine dishes, the Sheraton’s Sommeliers served the fresh and dry Champagne Deutz Brut Classic NV to begin with. Zind Humbrecht ‘Zind’ 2011 from Alsace had the aromas and fine flavour to match the early courses.



After this, Faiveley Chambolle Musigny 2011, with its nose of wood and fruit, was served to enhance even further the veal and cheese. Domaine Philippe Vandelle Vin Jaune 2006 entered next, with its distinctive spicy and fruity notes. The night was closed by Donnafugata, Ben Rye 2011 from Pantelleria, Italy, to be enjoyed with dessert.

Members and their guests enjoyed a wonderful evening of exquisite food, fine wines, good conversation and entertaining music. The picturesque night view from the 41st floor simply added to the pleasurable experience.
