Indonesia - Mandif Warokka

A shooting star of the Indonesian culinary world

Mandif Warokka, Maître Rôtisseur, is a young and upcoming chef operating in Bali. He is in competition with many chefs world-wide to serve the best of Bali’s fine dining experiences.

As a ‘local’ I am amazed with the many restaurants that have opened up in the last couple of years. Some come and go, but others are very successful – they cook to impress!

To mention good restaurants in Bali you must include Mozaic, Sarong, Metis, Merah Putih, Lestari, Warisan, Wa, Sardine and many more.

The upcoming successes are Sundara and Cuca in Jimbaran, and the tiny Teatro Gastroteque in trendy Seminyak where you can find chef Mandif Warokka in the kitchen.

Mandif, together with his sous-chef Daniel, seduce you with their smart design of a fine dining dish combined with Indonesian flavours and spices. Teatro Gastroteque is a truly fine dining experience with an Asian twist.

Mandif started his career as a Sous Chef de Partie in a 5-star boutique establishment, the Al Raha Beach Hotel in Abu Dhabi. After three years he finished his training in a local Hotel School in Bandung, Java Indonesia before moving to Desert Palm in the middle of the Dubai desert where he spent a further two years, also as a Sous Chef.



Mandif also worked as a guest chef in some of Europe’s most prestigious establishments, including Schloss Elmau Spa and Resort and Eisvogel in Bierkenhof, Germany, a Michelin-starred restaurant, before moving back to Indonesia. He was recruited as the Sous Chef of Jumana Restaurant at BanyanTree and the Laguna Hotel, both in Bali, where Chaîne members first discovered his talent and passion.

Today, Mandif is Chef/Proprietor of Teatro Gastroteque, a small and chic restaurant with a capacity of only 26 diners. The restaurant only opened last year, but booking at least a week in advance, even longer during the high season is essential.



A unique feature of the restaurant is that the kitchen is an open podium covered with a glass window through which passers-by on the street outside can clearly see the kitchen brigade busy cooking up a storm. Since opening Teatro Mandif has won several awards for his hard work: ‘Best Restaurateur of the Year 2013’; ‘Best Chef of the Year 2013’; Best New Restaurant in Bali in 2014’. I am sure there will be many more to come.

Mandif’s style show-casing daring combinations within his food are very impressive, as is his exciting and original presentation, using processed stones also other nature-based plates and displays. Dining at Teatro is an adventure of its own; you never know what to expect!
