Bailliage of North Alberta welcomes new members

Our annual Chapitre was at Sage at River Cree Resort and Casino. As well as inducting new members to bring our membership to 80, we also took the opportunity to recognize four members with long service awards.

After the Induction Ceremony there was a reception with 2002 Champagne Brun Brut and some wonderful amuse-bouches.

A great eight-course dinner followed. Executive Chef Shane Chartrand and his team tempted us with a starter of sous-vide butternut squash soup with Burgundy truffle broth. This was followed by a ‘smoked’ raw salad (again a unique presentation), then came scallop crudo (scallop and organic salmon).

Lime Tequila sorbet and a duck and sweetbread roll preceded the main course of milk-fed strip steak of veal. Dessert was very tasty sweet potato beignets. For those who still had room we ended the evening with a ‘torched’ aged Parmesan dish.

All in all everyone had a very enjoyable time and Sage is to be commended for hosting such a successful event.
