Bailliage of Selandia

The Bailliage started its 2015 events with 33 members and guests attending a formal dinner at Kokkedal Castle at Hørsholm in North Zealand. The castle, built in 1746 in the Dutch Renaissance style, was refurbished in 2013 reviving its aristocratic soul in a contemporary and inspired interpretation.

Restaurant Manager Nina Hynne Harvey, in collaboration with Sous Chef Jesper Steffen and Events Manager Martin Reimer, had arranged a wonderful menu with wines presented by Jonas Laulund of Vinslottet in Greve.

After a welcome glass of Ayala Champagne we were led in to the hall with its beautifully-laid tables and stunning chandeliers.

My immediate recollections on the wine and food pairings were that the Grüner was a perfect match for the delicate taste of the shrimp, the Auxerrois had a perfectly balanced sweetness which worked well with the richness of the foie gras and that the main course wine was beautifully complex.

The evening concluded with the presentation of Certificates of Appreciation to Restaurant Manager Nina and Sous Chef Jesper for an excellent event. The group showed enthusiastic appreciation of their efforts and we then adjourned to the bar where the enjoyment of the event continued into the small hours.
