Bailliage of Naples - Naples (Fl), December 5, 2011

One could almost believe we were in Napoli, Italy, rather than Naples, Florida, when we gathered at Sea Salt an elegant, partially open-air restaurant set within a landmark building in picturesque old Naples.

Venetian-born Executive Chef Fabrizio Aielli, Chef Rôtisseur, created a perfect menu for the Italian wines showcased for our ‘evening in Italy’.

The illusion was heightened by the presence of Marcello Palazzi and Robin Shay of Winebow, who not only offered a scintillating description of each wine but also entertained us with colourful anecdotes.


Rather than the customary passed hors d'oeuvres, they were served after we were seated. Sevruga caviar cone, lamb belly with figs and truffle, and colourful red beets and tuna, were accompanied by 2010 Zardetto “Zeta” Prosecco.

Belgian endive salad with pears, Gouda, and candied hazelnuts dressed with a lemon truffle vinaigrette

Il Primo
Truffle risotto, with drunken Piave cheese and pheasant

Masami Wagyu pot roast with grilled white polenta and root vegetable
2005 San Polo Brunello di Montalcino (Tuscany) / 2007 Allegrini Amarone della Valpolicella Classico (Veneto)

La Dolce

Milk chocolate espresso cake with a sea salt caramel centre
2007 Amarone Recioto Giovani Allegrini (Veneto)


Chef Fabrizio Aielli, guest sommelier Robin Shay and wine importer Marcello Palazzi earned heartfelt appreciation and applause from Bailli Sandi Moran and everyone present, all of whom for a few delicious hours had enjoyed la dolce vita.
