Italy Gourmet Carnival

Bailliage of Venice

The Bailliage led by Bailli Enrico Spalazzi inaugurated its Gourmet Carnival (Carnevale del Gusto). It is acknowledged to have been the most successful event of the ‘Venice Carnival 2015’ programme.

In its Italian name the reference to taste in its broadest sense is clear. In the spirit of the Chaîne, together with the cheerful conviviality between international members and their guests, the Gourmet Carnival privileged the pleasures and art of the table. As well as the fine food, the elegance and restraint of the carefully-selected palace salons distanced the event from the ‘circuses’ often staged at the city’s Carnival.

On the Friday evening guests could choose between two restaurants, namely the starry MET (Chef Luca Veritti) and the more traditional Osteria di Santa Marina (Chef Agostino Doria). In order to provide a warm welcome to everyone, Bailli Spalazzi presided over the dinner at MET, whilst Bailli Délégué Roberto Zanghi was at the Osteria.

The next day there was the opportunity to participate in a great Saturday brunch at the Hilton Molino Stucky. Brunch was preceded by an aperitif in the panoramic Skyline Bar on the 7th floor of the hotel. In appreciation of a splendid event Ivan Catenacci, Executive Chef of Aromi Restaurant – the pearl of Hilton Molino Stucky – was presented with a plaque of excellence for creating such a marvellous hot and cold buffet selection.

In the afternoon guests received their gala costumes in a temporary dressing room set up in the Hilton by the staff of Atelier Pietro Longhi. The greater majority of participants enthusiastically adopted the dress code which added to the great success of the evening.

One hundred and fifty members and guests were present at the Gala Dinner. They came from the Bailliages of Austria, France, Germany, Great Britain, Italy, Lebanon, Malta, Netherlands, Norway, Singapore, Spain, Sweden, Switzerland, Turkey, and the United Arab Emirates!

Disembarking from water taxis at Piazzale Roma the guests went in procession led by two soldiers in 18th century costumes to the wonderful Palazzo Zeno. Here a string quartet accompanied by a piano was waiting for them while Prosecco Filodora Tommasi and amuse-bouches were served:

- ‘Like a carbonara’
- Fennel cream and tomato bread
- Veal with oil made of dried porcini mushrooms and hazelnuts
- Salted choux buns with gorgonzola cream and prosciutto
- Mozzarella mousse, tomato confit and dried olives




A selection of masterpieces in artistic Murano glass decorated the tables. They were provided by the Estevan Rossetto glass factory whose owner is Chaîne member Lino Messina. The marvellous creations provided colour and reflected the candle light to make the Palazzo even more impressive than usual.

The magisterial dinner, prepared by Maître Rôtisseur Giancarlo Perbellini produced great satisfaction for the palate and eyes – “a true symphony of pleasures” as someone commented. Crucial was the contribution of Ristorante Do Forni which provided on-site support for the Michelin-starred chef.

Chef Perbellini and his team fully deserved the commemorative plaque of appreciation presented to him to the sound of rapturous applause from all those present! Afterwards a soprano sang opera arias in the stately main hall.




On the Sunday guests were met by guides in the Piazza San Marco to attend the Grand Opening Show of the Carnival (including the flight of the Angel from the bell tower of St.Mark’s) and join the ‘baccari’ tour, tasting delicious cicchetti en route.

The Bailliage of Venice wishes to express its deep gratitude to the participants of this first Gourmet Carnival. Fascinated by the exclusivity of the event we already have a growing list of those wishing to participate in the next edition!
