Bailliage of Hokkaido

The fourth1 in the series of five Chapitres organized at the start of 2015 was hosted by the Bailliage of Hokkaido at the Grand Hotel in Sapporo.

Sapporo is the fourth-largest city in Japan by population and the largest city on the northern Japanese island of Hokkaido. The city is known outside Japan for having hosted the 1972 Winter Olympics, the first ever held in Asia, and for the city's annual Yuki Matsuri, internationally referred to as the Sapporo Snow Festival, which draws more than 2 million tourists from around the world.

The city is home to Sapporo Brewery and the famous white chocolate biscuits called shiroi koibito (literally ‘white sweetheart’). It is also known as the birthplace of ‘miso ramen’.

Sapporo was cold with snow still remaining but the fine French-style cuisine by Executive Chef Koizumi, with only ingredients available on Hokkaido being used, warmed the hearts of the participants.




The dinner was glamorously kicked off by a toast from Hokkaido’s prominent businessman and benefactor, Chevalier d'Honneur Yoshiro Ito.

Of particular note were the tableware, cutlery and Baccarat glasses used for the occasion as these place settings were those specially made when Queen Elizabeth II visited Japan.
