1st National Final of the Competition in the Emirates

A major goal of the Chaîne is to promote and encourage young hospitality professionals. The skills and “know-how” of young chefs and sommeliers worldwide are developed through participation in the Confrérie’s Jeunes Chef Rôtisseurs and the Jeunes Sommeliers Competitions.

In 1977, Arthur Bolli, Conseiller Culinaire of Switzerland, created the Jeunes Chefs Rôtisseur Competition by instituting a cook-off from a mystery box of ingredients to serve three courses for four people.



In keeping with its new strategy the Bailliage of United Arab Emirates held its first National Final for young chefs at the world class culinary college, the International Centre for Culinary Arts (ICCA) in Dubai.

Thanks to Chef Uwe Micheel – Director of Kitchens at the Radisson Blu Hotel Dubai Deira Creek, President of the Emirates Chefs Guild and Conseiller Culinaire of Bailliage of UAE – together with Chef Daniel Hiltbrunner, Conseiller Culinaire Honoraire (Australia), from the ICCA, the Chaîne’s prestigious competition has at last found its way to the ‘culinary Mecca of the Middle East’ that is Dubai.

At noon on the dot Chef Uwe commenced the briefing for the 10 young chefs who were waiting with great anticipation for the mystery box to be revealed, the contents of which Chef Daniel had put together.




After 30 minutes in which to write their menus, the enthusiastic competitors started cooking with ingredients which included chicken, chicken liver, sea bass, king prawns, sweet potatoes, mango, sage, beans and chocolate.

The kitchen judges kept a close eye on the chefs’ cooking skills as well as product use and wastage together with their hygiene and work flow. After the culinary creations had been plated up the tasting judges were put to work marking on presentation, flavours and taste.

Following a post-competition debrief with the judges, the moment finally came that everybody was waiting for: the announcement of the winner! Rahil Rathod, from the Radisson Blu Hotel Dubai Deira Creek, was awarded First Place. Accordingly he is going on to the 2015 International Final in Budapest to represent the Bailliage of UAE. The Runner-up was Min Lee from the Burj Al Arab and in Third Place was Saravana Bhagavath from the JW Marriott Marquis Hotel.



It was a great competition with a very good standard from all participants. They learnt a great deal during the event. A big thank you is due to all the judges who made time to come and give their expertise. Of course one must not forget to thank the sponsors, Barakat International, Mitras and Baqer Mohebi who provided the main ingredients and the ICCA which hosted the competition by providing the facilities and support.
