Philippines Wine-pairing Dinner

The Ordre Mondial in Manila was treated to an extraordinary ‘French Classics’ dinner at Cafe Ysabel on October 12th.

We started with oysters served two ways and accompanied by Champagne Delamotte Blanc de Blancs 1999. There followed a timbale of sole stuffed with a salmon mousse partnered with a superb Joseph Faiveley Puligny-Montrachet ‘Les Folatières’ 1er Cru 2008. The next course was wild duck served ‘hunter style’ with a Burgundy Grand Cru: Louis Jadot Echezeaux 2004.

Wines from Bordeaux then had pride of place. The intricate beef course was matched by the Second Growth Saint Julien Château Ducru-Beaucaillou 2004 ...

... while the cheese flan was paired with a Saint Emilion Premier Grand Cru Classé Château Beau-Séjour Bécot 2004. For dessert, pear poached in red wine and soufflé ‘Rothschild’ were appropriately matched by First Growth Sauternes Château Rieussec 2003 - which is owned by the Rothschild Group.

With an intimate group of 14 members and guests it was the smallest Ordre Mondial event of the year thus far, however, the careful matching of the wine and food, together with the thought that went into the creation and presentation of the courses, certainly made it the most memorable wine dinner of 2011.
