Denmark Dinner

Bistro Nord, described recently as “Little Noma on the north coast”, played host to the Bailliage of Selandia’s latest event.

Maitre Restaurateur Tina Kragh, and partner/chef Sebastian Wickström certainly lived up to their reputation. The guests were unanimous in their praise for a fantastic evening.

The aperitif was Champagne Crépaux-Courtrois Blanc de Blanc Grand Cru which also accompanied the first course of “Stenen”: quail’s egg, hand-peeled shrimps and dill mayonnaise served on a stone.


The courses and wines which followed were:

Lumpfish roe with rye bread, a light mayonnaise and frozen buttermilk ... Sancerre ‘Ammonites’ 2008 - Domaine Matthias Roblin

Pan-fried trout, elderberry, celery and samphire ... Chablis 2010 - Louis Robin

Grilled ribeye steak, with confit potatoes, red onion shells and wild garlic ... Chianti Rufino Riserva 2007 - Cedro

Arctic landscape of yoghurt ice, white chocolate and meringue ... Alteburger Auslese 2009 - Weingut Markus


Each course was introduced by Tina, with great animation and detail, which increased even more our enjoyment of the evening.

At the end of the dinner Bailli Délégue Bent-Knie Andersen presented Tina and Sebastian with their Chaine Professionals’ Plaque.
