The winner of Germany’s 2012 National Final of the Jeunes Chefs Rôtisseurs Competition is a young lady!
Christina Merz won with a menu of:
- John Dory with roasted lobster and clams
- Roast veal and ragout of oxtail and mushrooms
with asparagus and garlic potato puree
- Chocolate mousse cake and baked tamarind parcels
with Greek yoghurt cream and olive oil
She works for Lufthansa which runs a training centre and hotel near Frankfurt Airport. They offer a gastronomic cuisine at a very high standard and Christina is certainly up to it!!
The Runner-up was David Pluta from the Fairmont Four Seasons Hotel in Hamburg. As they had the same scores, Third Place was jointly awarded to Marius Dietz, of the cruise ship M/S Deutschland and to Matthias Walter of the Hotel Zur Alten Post at Bad Neuenahr-Ahrweiler
In September 2011 Christina Merz won the “Dream Team Competition” organised by the FBMA (Food and Beverage Management Association). The Dream Team consists of three colleagues representing the kitchen, the service and the bar. Amongst eleven teams these three were the only team from Europe and were simply overwhelmed by their success.
Christina’s way of working was described by the Jeunes Chefs Competition kitchen judges as very creative as well as meticulous. Working efficiently and cost-effectively with food products has become more and more important. The days are gone when only the best parts of a fish or cuts of meat were used. Nowadays Chefs look to using as much as possible and thus cut down the amount of waste.
Christina will now represent Germany at the International Final of the Jeunes Chefs Rôtisseurs Competition being held in Berlin in September where she will be up against competitors from many other national Bailliages. For these young people at the beginning of a career it is always a marvellous opportunity to meet colleagues from all over the Chaîne world.
