France Grand Chapitre

Lyon, March 16-18, 2012

It would unthinkable to even contemplate a Grand Chapitre in Lyon without a visit to some local gourmet haunts!

The Friday night dinner took place at a traditional Lyon “bouchon”, La Tête de Lard, run by Chef Yoann Blanc. This was followed by a Saturday lunch at Vivarais, where talented Chef, William Jacquier, Meilleur Ouvrier de France in 1996, and his daughter, Audrey, gave us a real treat. The festivities ended with a farewell Sunday lunch at the Brasserie Elite during the course of which 40 guests were dazzled by the talents of Chef Stéphane Chevalier.

On Saturday, we took the time to explore the city and all its treasures, and the more studious among us attended a meeting of the National Council meeting, following by a Baillis meeting.

The event’s highpoint, the Induction Ceremony, followed its traditional formal rituals in one of the rooms at the Sofitel; Michel Cottray, Bailli Délégué of France and a member of the Conseil Magistral, presided over the evening, taking great pleasure in inducting 27 new members into the Confrérie, five of whom were professionals.

Baillis Délégués from neighbouring Belgium and Monaco reflected the international dimension of the Confrérie.

It was then time to enjoy an aperitif while watching some good-natured theatrical entertainment. The Gala Dinner that followed was attended by over 80 guests who all thoroughly enjoyed the fabulous menu created by Michelin-starred chef, Alain Desvilles.

- Lobster and sea bass mousseline with pistachio nuts, diced avocado and a Thai sauce
   “Les Hauts de Monteille”, Vin de Pays des Collines Rhodaniennes, 2010

- Pigeon fillet, roasted in a Banyuls reduction, foie gras and dried apricot pastilla
   Crozes-Hermitage, Domaine Combier, 2010

- Saint Marcellin and Cervelle des canuts

- Melt-in-the-mouth almond biscuit with a vanilla and bourbon cream and red berry sorbet
   “Made by G”, Domaine des Nugues

- Mignardises & Coffee
