Costa Rica Dinner

Santa Ana, July 1, 2012

The Doris Metropolitan Restaurant is located in Santa Ana, a popular suburb of San José. It is a steak house with a fantastic reputation among discerning diners, thanks in no small part to the process used to mature its beef and lamb. The owner, who has his own farm in the volcanic mountains of Guanacaste, is committed to guaranteeing the highest quality.

On our arrival, we were impressed by the sight of the large refrigerated window displays exhibiting an extensive variety of meats. We then had a tour of the large cold rooms where the meat is processed.

The reception was held on an open-air patio where the Bailli of San José, Klaus Steimetz, welcomed all the guests. We were then treated to canapés served with an Israeli sparkling wine: Golan Heights “Golan Brut”.

The menu and wines were as follows:

- Salmon tartare served with a radish mousse
    Dominio del Plata, crios Susana Balbo, Torrontes 2011 (an Argentinian wine)

- Grilled aubergine and tahini with crushed tomatoes and mascarpone with vanilla essence
    Golan Heights Yarden Merlot 2008 (an Israeli wine)

- Matured filet mignon, grilled and served with a black truffle purée and a demi-glace sauce,
   garnished with Brussels sprouts and almonds

    Golan Heights Yarden Syrah 2005 (an Israeli wine that suits this dish perfectly)


- Goats’ cheese cream on a passion fruit mousse
    Château Bouyot, Sauternes 2001 (a French wine)

The Vice-Échanson Diengo Chou made a point of introducing the Golan wines at each table, as they were chosen by the owner, Itai Ben Eli, who is originally from Israel.

The dinner ended with the presentation of the kitchen brigade and the Restaurant Manager with his team.
