Australia Dinner

[New South Wales] - Sydney, July 30, 2012

With 73 members and guests attending this Bailliage of New South Wales dinner, we completely filled the ground floor of the Peter Doyle @ The Quay Restaurant.

Peter Doyle @ The Quay is famous for seafood. For seafood lovers it does not get any better as Peter is dedicated to catching, cooking and serving up the finest seafood so one is always assured of dining on the finest catch. Situated at the Harbour Bridge end of the Overseas Shipping Terminal at Circular Quay, opposite the Sydney Opera House, the only thing that matches the superb food are Sydney's most spectacular views.

The extensive seafood dinner was succulent and the wines were perfectly matched with two per course, all from Tyrrell's Winery. Bruce Tyrrell commented on the wines and recounted his winemaker anecdotes.

The menu comprised:

A tasting plate of: King prawn on avocado mousse with  papaya salad,
cured salmon with fennel salad, blow-torched king fish sushi,
tuna tartare with pear salad and oyster vinaigrette

Queensland scallops and pork belly,
served with pumpkin and bacon puree, spinach and apple olive salsa

Sparkling berry sorbet

Butter-poached Western Australia lobster tail
   and calamari, served with onion puree and gnocchi

Vanilla panna cotta with caramelised pineapple
   and lychee salad, sweet short-crust crumble

Accompanying Tyrrell’s Winery wines were:

   Belford Semillon 2006
   Vat 1 Semillon 2005
   Belford Chardonnay 2009
   Vat 47 Chardonnay 2008
   Steven's Shiraz 2009 (red red ‘ring in’)

The Certificates of Excellence awarded by the Bailliage to the restaurant and to the winemaker on the night were well deserved.

Many thanks go to Vice-Conseiller Culinaire Richard Kiefer for initiating the event, to Vice-Echanson Fred Shaw for organising it and to Vice-Conseiller Gastronomique David Reberger for the winemaker co-ordination. Echanson John Studdert (who doubles as the Bailliage’s Vice-Chancelier) and Vice-Argentier John Stedman always manage and run the essential infrastructure behind each event with great expertise!
