Australia Dinner

[Western Australia] Perth, September 4, 2012

The Bailliage of Western Australia proudly held its 4th ‘All Chefs Dinner’ in the restaurant of Challenger TAFE’s hospitality training centre in Beaconsfield.

Originally the brainchild of Chef Graeme Shapiro, now Conseiller Culinaire, this showcase of talent by the Bailliage’s Professional members has proven to be a continuing success. In the last two years, Vice-Conseiller Culinaire Phil Westwood has taken up the baton of organising this event.

The primary purpose of the All Chefs Dinner is to support the development of young talent in the kitchen and front of house. This starts with trainee chefs working with experienced and successful local chefs when preparing the dinner and continues with hospitality students being given the opportunity to provide the service.

In addition, proceeds from the dinner and a live auction yielded a surplus of almost 6,000 Australian Dollars, which will go towards the ACCR and the Bailliage of Western Australia’s Youth Development Fund which provides training and support for the Bailliage’s candidates in the Jeunes Chefs Rôtisseurs and Jeunes Sommeliers competitions.

The dinner was prepared by 11 Chefs, including:

- from Challenger TAFE: Vice-Conseiller Culinaire Phil Westwood, Chef David Mopin and  Chef Lucio Marcchia

- from Petite Mort: Maître Rôtisseur Todd Stuart

- from Crown Burswood: Chef Marco Bilj, Rôtisseur Travis Simmonds, (winner of the 2012 National Jeunes Chefs Rôtisseurs
  Competition) and Chef Giampaolo Maffini, who created his famous Black Truffle Ravioli

- Maître Rôtisseur Soren Koberstein

- Chef Robert Withnall (winner of the 2010 National Jeunes Chefs Competition)

- from Jacksons: Commis Chef Johnathan Khin

- from Villa d’Este, there was the assistance of a Junior Chef de partie

All the courses displayed innovation, flair and taste and the circa 60 members and their guests in attendance enjoyed a wonderful evening of gastronomic delights and warm camaraderie.
