Autumn could not have started off any better than this!

For its annual Chapitre, the Bailliage was treated to a spectacular black tie dinner at the Mandarin Oriental Hotel. Members and guests were greeted by a wondrous scene resplendent in autumnal colours, enhanced by leaves with yellow and orange hues, fresh acorns and walnuts.



Eighteen new members were inducted by Bailli Délégué Datuk Dr J S Sambhi, who presided over the Induction Ceremony in his capacity as a Member of the Conseil Magistral. We would be remiss if we did not recognise Datin Margaret Sambhi for her wholehearted support for her husband. As they say, ‘behind every great man is an equally wonderful woman’.



Pre-dinner hors d'oeuvres consisting of foie gras with cauliflower puree and caramelized mirabelle, smoked mountain trout ravioli stuffed with Alaskan king crab and Avruga caviar on dehydrated potato crisp, were superbly paired with Bollinger and Laurent-Perrier Champagnes. Autumn could not have started off any better than this!




Following the reception there was presentation to Mohammad Muzhaffar bin Mohd Aris, of Le Meridien Hotel, Kuala Lumpur, who represented Malaysia at the 2012 International Final in Berlin of the Jeunes Chefs Rôtisseurs Competition.



A highlight of the evening was the presentation of the first ever ‘Excellence in Dining’ award in honour of the late Dato’ Lau Foo Sun. This new annual award is made to the establishment deemed by the members as having delivered the finest dining experience amongst all the Chaîne dining events held that year. To’ Puan Chit Wha Lau was specially invited to bestow the award on the Kuala Lumpur Convention Center. It was accepted by the Center’s Executive Chef, Officier Maître Rôtisseur Richmond Lim.

The menu and wines served at the dinner were as follows:

- Apple-wood smoked halibut served on a canvas of avocado, green tomato and red chili salsa
    Villa Maria Estate Private Bin Gewürztraminer 2010 (New Zealand)

- Peach-grilled farm duck with sautéed Savoy cabbage, field greens, walnuts and grapes
    Merlot Carmen Reserva Valle de Colchagua 2009 (Chile)

- Delicately poached North Atlantic cod
    Villa Antinori Bianco 2010 (Tuscany, Italy)

- Aromatic lamb cutlet on a spoonful of celeriac puree, eggplant and winter onion
    Wolf Blass Bilyara Shiraz 2011 (Australia)



- Grilled diver scallop with Vacherin Mont d’or au four

    Villa Antinori Bianco 2010 (Tuscany, Italy)

- Grass-fed Wagyu beef sirloin, croquette potato and Brussels sprouts
    Kendall Jackson Vintner’s Reserve Cabernet Sauvignon 2008 (California, USA)

- Delights of mango and apple, served with Amarena cherry ice-cream
    Brown Brothers Orange Muscat & Flora 2010 (Victoria, Australia)

Providing a most satisfying conclusion to the culinary delights were petits fours accompanying either dark-roasted Arabica or a specially-selected Canadian Mountain Berry Tea.



For Executive Reiner Lupfer this was his swan song event as the following day he left Kuala Lumpur to take up his new post as Executive Chef of the Mandarin Oriental in Chiang Mai.  We wish him the very best in his future endeavours.
