Bailliage of Bordeaux

The Bailliage chose the beautiful, light room at the Comptoir de Sèze in Bordeaux for a day dedicated to one restaurant about which complimentary rumours have been widespread. We decided it was time to find out if there was any truth to those rumours.

Some thirty members and guests attended the lunch. The rumours were proved 100% correct: the setting was charming, the food excellent and the service could not have been better.

Head chef Jean-Christophe Martinez exceeded the expectations of the most demanding of palates by demonstrating real talent. His dishes were of the highest quality and, although fairly traditional, they included a number of subtle concessions to a delightfully inventive creativity which showcased the surprise factor.

Oxtail crisp with foie gras, mixed tangy salad, truffle jus

Milk-fed lamb from the Pyrenees, prepared in 4 ways served with crunchy spring vegetables and a rich jus

Light chocolate and passion fruit dessert with a blackcurrant sorbet

Coffee and Sèze’s special petits fours

The care that was taken in the presentation of the dishes treated us to a real visual feast, making it even more of a pleasure to enjoy their delicate content.

High praises were given to this talented young chef and his brigade, reflecting our delight at the discovery of this fantastic venue which is set to become a highlight of Bordeaux’s gastronomic map.
