Kenya Dinner

The Bailliage of Mombasa’s formal Christmas Dinner at the Sarova Whitesands Beach Resort & Spa is always a much looked forward to event in the calendar. This year the bookings surpassed every expectation and a ‘full house’ was reached before the deadline date!


Sarova Whitesands Beach Resort & Spa more than lived up to its superb reputation by producing unusual twists to a traditional Christmas dinner. Executive Chef Gurpreet Singh Mehta, newly arrived from Dubai, put all his skills to the test by producing a 9-course menu (not counting a vast array of canapés!) which was well balanced and a gourmet’s delight on the palate as well as a visual masterpiece. The wines were perfectly paired by a Winemaster from Nederburg, South Africa.

Outstanding courses included Indian Ocean Lobster served with Kenya Avocado and Grapefruit salad and Hibiscus Reduction, Homemade Cheese Mousse served with Fruit Chutney, Sweet Potato Waffle and Wine-stewed Bullet Chillies.

Spontaneous applause greeted the dessert which consisted of Duo of White and Dark Chocolate Mousse with a taster of Christmas Pudding. On the plate sat a marvellous miniature gingerbread house made entirely out of dark chocolate!

The Chaîne is of course all about fine dining and wine enjoyed amongst good friends. The ambience created by Food and Beverage Manager Mike Kamau was uplifting and festive. 

Edible designer chocolate menus were specially imported from South Africa for the function.

Sarova Whitesands Beach Resort & Spa is known for its environmental concerns. The name tags of the diners were printed on pots containing real miniature cypress trees. We were advised that these could be planted in the garden after two months to achieve a normal tree height.

To conclude the evening, upbeat music was especially compiled for this event to keep in the true spirit of the festive occasion and the members and guests were thus able to dance the night away after the dessert.




This was amongst one of the finest dining experiences in the history of Chaîne in Mombasa. Well done Mohamed Hersi and team!
