Australia Dinner

The pre-Christmas celebrations saw the Bailliage of Brisbane dine in the Strangers' Dining Room at Queensland's Parliament House.

The Dining Room is aptly named as anyone who is not a Member of Parliament is a ‘stranger’!

One of the most ornately decorated rooms in the City, it was a fitting location as we were regaled with a menu replicating the pre-Christmas dinner of His Majesty King Edward VII at the Sandringham Estate, England, in 1905. [NB. Sandringham has been the private home of four generations of British monarchs since 1862.]

The twelve-course meal was typical of the lavish ‘cuisine classique’ served during Edward VII’s reign. The Parliament House Chef's challenge was to pay homage to the old menu, keeping the key themes, but adding his interpretation using current ingredients and methods.

The result was a fabulous mix of old and new and perhaps dishes few will see on modern menus.

For me the highlights were:

- Melon Cocktail with Crab – a fun, refreshing dish; the melon cubes looked like little jellyfish ‘swimming’ on the plate.

- Haunch of Venison with Sweet and Sour Sauce – more serious, though simple; given the numbers dining, was cooked to perfection … in my humble opinion, the sign of great Chef!

Huge thanks go to Bailli Augustine Tso and Maître Restaurateur Jaakko Ponsi, Manager of the Parliamentary Catering Division, for organizing such a fantastic event – all in a day’s work for Jaakko as this was one of the 900 events that the Catering Division organizes each year!
