The Bailliage of Manila held the grandest event in its 2013 calendar – its 41st Chapitre at the Shangri-la Hotel in Makati.

This year’s gala event was special for two reasons: firstly, it occasioned the induction of 16 new members into the Manila fold, concrete proof of the magnetic force of the Chaine’s exclusive dining culture; secondly, it was a tribute to the world’s greatest poet and playwright, William Shakespeare.

Bailli Délégué of Philippines Michel Lhuillier, in his capacity as a Member of the Conseil Magistral, presided over the Induction Ceremony. He was assisted by Donald Hall, Member of the Conseil Magistral from Macau. Additionally there was a special participation by Amparito Lhuillier, Bailli of Cebu. Other visiting members and guests from Cebu and indeed further afield were also notable by their presence.

The preparations for the Gala Dinner were a labour of love involving months of brainstorming the concept, building a menu, choosing the wines and pairing them off, one by one, with each course.

Crafted by the seasoned hands of Maître Rôtisseur Paul Lenz and blessed with the approval of the Bailliage of Manila’s discriminating members and their visitors, the dinner was pronounced brilliant. Each course was a magnum opus with every morsel a worthy homage to The Bard.

The witty and clever rendition of the menu saw quotations from Shakespeare’s most beloved plays woven into choice elements of every dish. The Shakespearean touch was magnified by film clips of silver-screen theatre and vivified with live interpretations of a selection of Acts by stage actor Jeremy Domingo.

All in all, the event was a quite sophisticated and glorious merging of The Bard’s elegant poetry with Chef Paul Lenz’s modern take on the foods. We like to think that it must have fed Shakespeare’s soul!
