Bailliage of Beijing - Which came first, the chicken or the egg?

For those at the dinner at the Conrad Hotel it was the egg. Skilfully presented, cooked to perfection, the yolk was still soft in the centre. Surrounded by a roulade of fillet of sole, shrimps and cream sauce it was perfectly displayed and the favourite of many.

But we did not start off with the egg!

The evening began with Peach Bellini cocktails served with canapés of tomato salsa on crostini, pork jelly with sauce gribiche and foie gras terrine on sesame crackers.

Dinner itself began with Greek-style artichokes, octopus and fennel followed by the already mentioned egg dish, oeuf mollet Regina.

The fish course was Lobster ‘Tourville’ – lobster and clam velouté with Parmesan risotto. It was followed by Suprème de poulet ‘Louise d Orléans’ being chicken breast stuffed with foie gras and truffle and served with asparagus tips.

Dessert was Surprise Milady – raspberry sherbet on a fan of poached peach with meringue and Rose petals.

Wines selected were perfectly paired:
-  Dr. Bürklin-Wolf Riesling 2011 from Germany for the starter
-  Casa Lapostolle Sauvignon Blanc 2011, Rapel Valley (Chile), for the egg
-  Coppola ‘Diamond Collection’ Chardonnay 2010, California 2010 for the lobster
-  Kim Crawford Pinot Noir 2010, Marlborough (New Zealand) with the chicken
-  Royal Tokaji Late Harvest 2009, Hungary, was served with the dessert

Limited to just 40 diners this event was keenly anticipated and fully booked within five days of its announcement.

After an evening of intense gastronomic pleasure, the only thing left to say was ‘a job very well done’ to the kitchen and service brigades. Spontaneous applause confirmed everyone’s agreement with the accolade.
