Tanzania Inaugural Dinner

The Chaîne des Rôtisseurs is delighted to be able to announce that an inaugural dinner has been held in Tanzania.

The nucleus of members and their many guests gathered at the iconic hotel that is the Hyatt Regency Dar es Salaam, The Kilimanjaro.

Named in honour of Africa’s highest mountain, Tanzania’s Mount Kilimanjaro, the hotel echoes the magnificence of this world-famous national landmark. A modern oasis in the heart of the largest Tanzanian city, the five-star hotel’s superb waterfront location, spectacular views of the harbour and Indian Ocean, and proximity to the city’s International Airport ensure its place among the best-situated luxury hotels in the city.



The Hyatt Regency Dar es Salaam, The Kilimanjaro, provides the perfect setting for every occasion and so it was for our inaugural dinner. The elaborate seven-course menu featured the culinary artistry of the Hyatt’s Executive Chef Siddhartha and his brigade. The courses were paired with a selection of five exquisite wines.

Ceviche of tuna with chili, lemon grass, shallots, baby leaves, macerated orange and lemoncello

Carpaccio of fillet of beef with aged Parmesan, roasted pumpkin salad and rosemary

Cauliflower soup with wild mushroom, truffle oil and chicken dumplings

Passion fruit and mango sorbet

Red snapper with smoked eggplant, avocado and soy sauce

Wine: Deakin Estate 2011, Murray Darling, Australia

Confit of Duck, cassoulet of beans, fondant potato, braised prunes

Wine: The Mentors Orchestra 2009, Western Cape, South Africa

Spiced chocolate chiboust, wild berries marinated in Grand Marnier, orange sabayon

Wine: Pineau de Laborie, Paarl, South Africa

The event attracted some 70 guests, all enthusiasts of fine gastronomy and curious to know what the Chaîne des Rôtisseurs can bring to Dar es Salaam. Accordingly, in the course of the evening, the opportunity was taken to explain the philosophy to these potential new members. As a result several of the guests immediately showed an interest in becoming Chaîne members.

It was wonderful to have had the chance to promote the Chaîne whilst enjoying great company around good food and wine.
