A Bailliage Provincial of Bali event at the sensational Amankila Resort

Taking inspiration from a decadent Sunday lunch in Provence, the sensational Amankila Resort hosted a Chaîne lunch on a balmy Sunday at the end of September.



Amankila or 'peaceful hill' is an oasis of calm in the remote yet accessible Karangasem region. Perched on a cliff side overlooking the Lombok Strait, Amankila is a haven of tranquillity. Chic and understated, it draws on the traditional architecture of the region and is possibly one of the most romantic destinations in Bali.

The sunny seaside day began with champagne overlooking the three-tiered Amankila pools which were inspired by the Royal Water Palace of Taman Ujung built by the last Rajah of Royal Karangasem.


 
Luncheon looking out onto the Lombok Straight was also a royal affair beginning with Carpaccio of heirloom tomatoes with olive oil sorbet, fresh herbs and feta. The accompanying Riesling wine was no less magnificent. Considered by the majority of wine critics to be the world’s finest white wine grape variety, the Riesling wine chosen by Amankila’s German-born General Manager, Claudia Schwarze, was a Schlossgut Diel Nahestein Riesling Trocken 2010.



Following the first course, Executive Chef Liam O’Brien produced a simply beautiful aromatic bouillabaisse. Working with local fisherman to source incredibly fresh lobster, prawns and fish, the rich dish was expertly paired with Châteauneuf du Pape Blanc 2009, Domaine des Sénéchaux.



After a signature palate cleanser of Lemon lime bitters granita, crisp suckling pork was served with a Gago 2009 from Toro. Dessert came in the form of ‘cheery’ ripe cherries with cherry coulis, whipped coconut and cocoa crumbs. A perfectly-chilled Billecart Salmon Brut Champagne made for a heavenly marriage.



After lunch guests meandered down to the resort’s private beach to enjoy after-lunch drinks and cigars by the seaside, provided with the compliments of the new Bailli of Ubud, Frits Henskes.

It was truly memorable day on Bali our island paradise. We had all participated in a perfect Sunday lunch, with good food, great wines and the best of all, camaraderie in abundance – just as it should be at any Chaîne event. The last guests to leave saw the sun begin to set.
