Bailliage of Périgord

A meal dedicated to the summer truffle was served at the hotel and restaurant Les Glycines in Les Eyzies-de-Tayac-Sireuil, a municipality in the département of the Dordogne.



Les Glycines (3 stars, Châteaux & Hôtels Collection) is located on the outskirts of the village of Les Eyzies, not far from the banks of the Vézère. It enjoys unique panoramic views of the surrounding cliffs.



The chef, Eric Jung, gathers together all the best local ingredients, including the freshest vegetables, combining them with some exotic fruits and spices to create magical dishes. This Chef inspired inventive, delicious approach changes with the seasons for sheer pleasure. It always respects the ingredients.



The Chef also likes to open up his kitchen Périgord-style, so customers are included in the whole culinary experience. 

For our Dîner Amical, we were delighted to be able to welcome a group of Chaîne members from Germany who had come to explore the Périgord. We introduced them to the delights of the summer truffle1, so brilliantly showcased by the chef, Eric Jung.

sautéed braised fillet, stuffed courgette flower and summer truffle

Grand cru “Tanariva” milk chocolate
emulsion with fresh Arabica and chestnut mousse

This was a delightful dinner and members of the Bailliage and their German Confrères thoroughly enjoyed the food, the wine and the company until late into the night, as is traditional for the Chaîne!

1 Tuber aestivum, known as the summer truffle or the Burgundy truffle, has a subtle, light woody fragrance and echoes of the flavour of forest mushrooms. It is ready to eat from the beginning of May to the end of September.
