Sweden Jeunes Chefs Rôtisseurs

Luqaz Ottosson is the winner of the Bailliage of Sweden’s 2012 National Final of the Jeunes Chefs Rôtisseurs Competition.

The final was held at the Stockholm Hotel and Restaurant School where Luqaz Ottosson, from the Restaurant 50 Kvadrat in Visby, was competing with five other finalists, all from establishments in Stockholm:

Johan Backeus – Restaurant Lux
Ida Eriksson – Scandic Anglais Hotel
Oskar Gunnarsson – Restaurant Djuret
Cecilia Kvist – Restaurant GQ
Max Westerlund Inazawa – Brasserie Pontus by the Sea


The Runner-up was Oskar Gunnarsson and third place went to Cecilia Kvist. Cecilia received an additional prize for being the “favourite of the public” as far as the presentation of the food was concerned.

Luqaz prepared a three-course menu from the traditional basket of ingredients – the so-called “black box” – including the compulsory cod (torskrygg) and roast beef (rostbifflock). His winning menu was:

- Fried Cod with cabbage, tomato and dill sauce, browned butter and horseradish

- Crisp-coated beef steak with baked Jerusalem artichoke, carrots, celery cream, chips from roots and red wine gravy

- Apples cooked with blueberries and served with candied hazelnuts, cookie crumbs, chocolate and vanilla cream.  

In announcing the winner, the jury commended Luqaz by observing that in a strong competition the young chef had succeeded in creating an appetizing menu with especially confident first and second courses.

The Bailliage of Sweden is most appreciative of the support given to this year’s National Final by the members of the Jury and especially by its sponsors.
