Sweden Dinner

Bailliage of Skåne - Lagan, April 21, 2012

A group of twenty-two members and guests from the Bailliage of Skåne, led by Bailli Birgitta Renlund and plus four visitors from the Bailliage of Selandia in Denmark, visited Toftaholm Herrgård on an early Spring weekend in April.

Toftaholm Herrgård enjoys a quiet setting by the eastern shore of Lake Vidöstern, a stone's throw from the main road between Värnamo and Ljungby, in the heart of the lovely Småland countryside. A gastronomic stronghold, the establishment dates back to the 14th century. The finest traditions of inn-keeping are part of the fabric. Today, Agneta and Torbjørn Colfach are the proprietors. They are the 26th owners since 1389 to continue the heritage of this historic inn.

Petter Augustsson, the 24-year-old chef of the hotel, prepared a five-course menu for us. It was wonderful to eat!

The elegant first course was a carpaccio of cod with king crab, pea purée and watermelon. With it we drank a light, white wine from Alsace.

The next course was a large scallop served with slices of scorzonera (black salsify) with a “black sauce”. The base of the sauce was cuttlefish. With this dish we enjoyed Gavi di Gavi, a white wine from Italy.

The main course was two pieces of tender veal surrounded with a veal jus and accompanied by truffle, a small duck liver sausage, white asparagus and a mash of asparagus potatoes. A Châteauneuf-du-Pape was the chosen wine.

A wonderful Epoisses from Burgundy went down well for the cheese course, especially when served with the unusual Macvin du Jura*. The last course was a dessert of spring rhubarb, pomegranate, strawberries and a little block of Tahitian vanilla. Moscato d`Asti – a sweetish and lightly sparkling wine from Italy, was the perfect partner.

The inn’s and the Chaîne’s traditions were as one on this wonderful evening. We enjoyed the food, the wines and the good fellowship, all the while taking in the spectacular view of the lake and being pampered by exemplary service.
