Denmark Grand Chapitre

Our 2012 Grand Chapitre went very well!

The programme commenced on Friday, June 15th with a Welcoming Dinner at the famous fish restaurant Rudolf Mathis in Kerteminde. On the Saturday there was picnic excursion to the small island of Sprogoe in the middle of Storebaelt, a place that cannot ordinarily be visited.



The Induction Ceremony took place at Nyborg Castle where 32 members were inducted or promoted. It was with much delight that the new members receiving their insignia included several young professionals who the Chaîne in Denmark has lately been able to attract. Among these was Patrick Lieffroy, of Restaurant Lieffroy in Nyborg, who then went on to prepare a Gala Dinner of uncompromising high quality.


 
The menu for the Gala Dinner was:
- Sautéed lobster
          with white asparagus and hollandaise sauce
- Sole (which had been caught in the sea just by the
          restaurant!)
with Danish new potatoes
- Foie gras with fennel
- Ballotine of veal tenderloin with vegetables
- Danish cheese
- Fresh Danish strawberries and elderflower parfait


The programme of events concluded with a Sunday brunch at Hotel Hesselet.

The Grand Chapitre was an exciting experience and a great gastronomic treat for all the participants.
