A Culinary Journey South

Just after the snowbirds flock north, the Bailliage of Space Coast heads south each year to feast on the amazing cuisine of Chef Rôtisseur Joe Faria at the Quail Valley River Club in Vero Beach.

The annual reverse migration is a favorite among members because it also includes accommodation at the luxurious riverfront country club, where Chef Rôtisseur Faria is Executive Chef.

The annual event was founded by Bailli Harold Cordner, who is a club member and Vero Beach resident. He suggested the country club as a dinner destination shortly after joining the Bailliage of Space Coast and it has been a tradition ever since.



The menu commenced with grilled diver scallop and jump lump crabmeat on micro greens with a mango ginger sorbet and paired with a 2009 Vincent Girardin Puligny-Montrachet.



The second course was a homemade ravioli that, when pierced, ran with golden egg yolk. The flavors were enhanced by applewood-smoked, pork belly bacon and a 2003 Cascina Longoria Barbera d’Alba.

Sautéed quail breast arrived with lemonade-marinated artichokes and mint-scented English pea crème fraîche. The dish was delightfully paired with a 2010 Belle Glos Pinot Noir Las Altruas Santa Lucia Highlands.





The fourth course was a decadent prime beef and winter truffles with foie gras hollandaise, potato confit and roasted shallot jus paired with a 2009 Justin Red Blend Isosceles Paso Robles.

Dessert featured a summer favorite, watermelon, in the form of a panna cotta served in a mason jar with lemon almond meringue. A 2011 Beni di Batasiolo Moscato d’Asti provided the perfect amount of sweetness for the dish.



Following dinner, members lingered on the porch overlooking the inter-coastal waterway or wandered the club’s pathways past the swimming pool and tennis courts back to their rooms.

Members left the following morning content with the knowledge they would fly south to the Quail Valley River Club again next year.
