Netherlands Dinner

In a special ceremony, Petro Kools was inducted as a Maître Restaurateur. The ceremony, attended by 50 Dutch and Belgian Chaîne members, was held at the Michelin 2-star Da Vinci Restaurant.



To celebrate the event, a dinner followed. The menu and wines comprised:

- Gently poached sea bass and Canadian lobster with Limburg asparagus
    Rueda 2011 Blanco Nieva Sauvignon (Spain)

- North Sea turbot, Hollandaise sauce and Limburg asparagus
    Cuvée XII Apostelhoeve Limburg (The Netherlands)

- Atlantic king crab
    Vin du Pays des Collines Rhodaniennes 2010 Viognier (France)

- Fillet of Dutch veal, sweetbread and veal cheek with morel sauce
    Navarra 1999 Marqués de Valcarlos Gran Reserva (Spain)

- Dessert of strawberries and raspberries with vanilla ice-cream
    Piemonte Moscato d’Asti (Italy)



The Da Vinci Restaurant has an excellent reputation, largely due to the commitment of Margo Reuten and Petro Kools to make what is already excellent a little better every day. That is precisely the kind of quality the connoisseurs of the Chaîne appreciate.
