Presentation

We are all members of the Chaîne des Rôtisseurs and we love gastronomy. This is a privilege. But while we enjoy the most impressive cuisines and wines in the world, we should not forget that there are people suffering not far from us.

The aim of this gastronomy school project (under the auspices of the Association Caritative de la Chaîne des Rôtisseurs (ACCR) - the Chaîne International Charitable Foundation) is to give a chance to young people in need.

We will give them hope, a chance to dream again, a better life, a future.

We need you, members of the Chaîne des Rôtisseurs around the world, to help us in raising the necessary funds to realise this project. Together we can make it happen.

Objectives

Our objective is to create a Chaîne des Rôtisseurs’ Gastronomy School in Évora, Portugal, to introduce and teach activities to needy young people, with the following aims:

-    Give young students coming from poor families a
      space to socialise between lessons and their return
      home.

-    Ignite in these young people an interest in catering
      through contact with gastronomy and oenology.

-    Reveal to the students the potential for a career in the profession.

-    Encourage the acquisition of specific basic skills in the areas of food and wine and discover new talent in this sector.

-    Encourage the students to achieve a secondary educational   qualification of “Qualified Technician” in the catering
      profession.

-    Introduce them to the gastronomic and oenological heritage of the Alentejo, with the aim of developing tourism,
      employment and the local economy.

This course will include visits to selected hotels and restaurants in the country, wine producers, and to professional gastronomy schools with the possibility of a future qualification.

Our target is 15 students per year being young people aged 12 to 16 years in Secondary Education and coming from needy families in the region of Évora, Portugal.

Course Duration & Curriculum

The course comprises 420 hours of tuition spread over 2 years, based on a cycle of 3 days a week /
2 hours a day.

The following elements are included:

-    General cookery / Gastronomy (235 hours)
-    Pastry cookery (45 hours)
-    Oenology (75 hours)
-    Visits (30 hours)
-    Evaluation (35 hours)


Place

The lessons will take place in the Social Centre of the Parish of Our Lady of Fatima in Évora. Father Francisco Senra Coelho opened this centre in 1993 with the construction of a complex that includes a day centre, home support for the elderly, and a youth centre.

A new project was begun in September 2001 to help support families in Evora and to tackle other social problems more effectively. This social organisation aims to sustain the most vulnerable by working along the same lines as Caritas.
