Thirty two members and guests enjoyed a Bailliage of Selandia evening at newly-opened restaurant “KogT”, the name being a play on the owner’s names, Thomas Kragelund and Per Thøstesen, of Bistro Bohème fame.
The cornerstone of the kitchen is French cuisine combined with elements from Bali, the Caribbean, Italy, Denmark and the Americas!
We started with a spicy tomato soup, with mozzarella, pancetta and basil bread, followed by fresh tagliatelle tossed in coriander, chilli and dill, served with marinated shrimps. The main course was roasted veal served with Botana onions,
mushrooms and sweet corn, with sauce bordelaise and fried potatoes. The
dinner was rounded off with raspberry tart, with marzipan cream,
caramel, raspberry sorbet and roasted coconut.
Accompanying wines were a Burgenland Weiss 2011, from the Austrian biodynamic vineyard of Meinklang and from the southern Italian estate of Feudi di San Gregorio, their Primitivo 2010.
At the end of the evening, for the benefit of the guests attending, Vice-Chargé de Missions Torben Søemod gave a short talk on the history of the Chaîne. Vice-Conseiller Culinaire Dean Harvey followed this by thanking Chef Thomas Kragelund for our wonderful dinner and presenting him with a certificate of appreciation. It was then with much pleasure that Thomas was welcomed into the Chaîne as a new member.
