Slovenia Chapitre

The Induction Ceremony at a (Grand) Chapitre is certainly a very special event for the Chaîne community.

This year our Bailliage’s Chapitre was held in the beautiful Grad Otočec, a castle hotel on a small island in the middle of the River Krka. We were hosted by the castle noblesse, performed by an actress, who recounted anecdotes about the castle’s customs and sang several mediaeval songs for us.

Our own Bailli Délégué, Tomaž Ravnikar, in his capacity as a Member of the Conseil Magistral, presided over the Induction Ceremony which took place in the open air surrounded by the autumn colours of the castle’s garden.

Conseiller Gastronomique Professor Janez Bogataj assisted by giving a brief explanation on the history and objectives of the Chaîne.



After the ceremony, the castle’s culinary team served exquisite hors d'oeuvres. Then we moved into the recently-renovated restaurant where the dinner was served at a purposely unhurried pace.



The menu comprised:

- Mildy spicy salad with lobster tails
   in polenta with herbs and pomegranate



- Corn soup with dried fruit bread


- Ravioli filled with boletus mushrooms



- Champagne peach sorbet


- Lamb cutlets with thyme and shallots, baby potatoes
   with cottage cheese, buttered carrots



- Chocolate mousse with chilli and homemade ice cream

At the end of the dinner, the kitchen brigade led by Maître Rôtisseur Dejan Pavlič, the service brigade and our host, Dejan Koncilija, the Food and Beverage Manager, were invited into the restaurant.

Bailli Délégué Tomaž Ravnikar congratulated them all on such an exquisite culinary event and reserved a special mention for the outstanding service.
