Cheers! Holiday Glitter at the Balboa Bay Club

The magnificent and inviting splendour of 500,000 lights wowed the members of the Bailliage of Newport Beach as they approached the motor court of the Balboa Bay Club & Resort. Once inside, they saw huge gingerbread houses and glorious decorations used everywhere to magical effect.



The mood was festive as members in oh-so-elegant attire gathered together in the ‘First Cabin’ dining room. They enjoyed glasses of Schramsberg Blanc de Blanc and Joel Gott Sauvignon Blanc wine along with hors d’oeuvres and animated conversation. Many souvenir photos were taken to memorialize the evening.



Chef Rôtisseur Executive Chef Josef Lageder has earned a well-deserved reputation as a creative master of cuisine. His food is always elegant, innovative and beyond expectations.



This event drew members and guests from Bailliages as far away as San Diego for Chef’s special menu. He introduced this experience with succulent peaky toe crab and mango wakame salad in a puddle of wasabi caviar aioli. Thorn-Clarke Mount Crawford Riesling 2011 from Australia’s Eden Valley accompanied this.

Badisch ‘Weinberg’ schneckensuppe, (snail soup) is a tradition in Germany. This amazingly delicious soup was very popular indeed! Wild Horse Viognier Central Coast from California played an appropriate supporting role.



Freemark Abbey Chardonnay 2011 from Napa complemented a paella-style seafood risotto with monkfish. A pretty and refreshing palate adjuster of cranberry vodka gelée and Crispin Brut Extra Dry Apple Cider followed to refresh palates.

The staff circulated with bottles of 2007 Gevrey-Chambertain from Domaine Chanson Père et Fils. A beautiful pairing for the slow-roasted veal prime rib served with sauce forestière and a perfect truffled dauphinoise.

Caramel and chocolate praline torte accompanied by Taylor-Fladgate Ruby Port was the delightful conclusion to this exceptional dinner.



Chef Lageder and his veteran kitchen team ‘wowed’ the Chaîne group yet again with a truly fine dining experience.
