The Bailliage of Western Australia held its annual Chapitre at the Crown Entertainment Complex, with the Lord Mayor of the City of Perth, The Right Honourable Mrs Lisa Scaffidi, as guest of honour.

Dr Ted Lee, Member of the Conseil Magistral, came from Singapore to induct new members and preside over promotions to higher office – 26 in all. Notably, Bailli Wayne Teo who received a Chaîne Bronze Award in recognition of his services to the Bailliage of Western Australia. The Bailliage was delighted that Bailli Délégué Jannece Tapsall had flown to Perth to attend this event, as well as other distinguished Australian Chaîne office holders and members.



Under the experienced hand of Vice-Chancelier Amanda Spencer-Teo (then Vice-Conseiller Gastronomique) the local Bailliage spared no expense, effortlessly orchestrating an unparalleled gala dining experience.

The new Vice-Conseiller Gastronomique Wendy Ryder, an international food aficionado, said: “When I walked into my room, my jaw dropped. The combination of the décor, the service, the food, was breathtaking … it just stood out because it was unusual. Nothing like we imagined.”



The true highlight of the evening was the cuisine. Designed by Crown Perth’s Executive Sous Chef and Chaîne member Sean Marco. The menu paid homage to five of his culinary heroes and mentors: Paul Bocuse, Joel Robuchon, Pierre Troisgros, Alain Ducasse and Michael Bourdin. Each dish was flawlessly executed by Chef Marco and his talented team at the Crown Entertainment Complex – no mean feat to serve more than 80 diners impeccably.



Vice-Conseiller Gastronomique Wendy Ryder’s husband Wayne is not a foie gras fan but his favourite dish of the night was the one inspired by Chef Joel Robuchon’s signature seared foie gras with fruits!


 
Staying true to the French theme, Perth jazz singer Libby Hammer performed classic French songs during the evening, each chosen because of its meaning for the particular dish that was being served at the time, or the Chef who inspired that dish; including Édith Piaf’s timeless Non je ne regrette rien, which was written in 1956, the same year Chef Alain Ducasse was born.

Many praises were sung on the evening and months after the Gala Dinner – this is without doubt the most exquisite event ever presented by the Bailliage of Western Australian in its long and distinguished history stretching over several decades.
