Mexico Cultural Visit

State of Chiapas, April 17, 2013

A group from the Bailliage of City of Mexico paid a cultural visit to the wonderful State of Chiapas, the southernmost state of Mexico.

Tourism brings large numbers of visitors to the state each year. Most of Chiapas' tourism is based on its culture, colonial cities and ecology.



During the visit we had the opportunity to marvel at several world-famous archaeological sites, such as Palenque, Yaxchilan, Bonampak and Toniná. At each we could appreciate the great architecture of the Mayans.



We also stopped at the village of San Cristobal de las Casas with its typical Chiapas’ architecture and way of life to taste some of the delicious regional dishes.

Chiapan dishes do not incorporate many chili peppers as part of their dishes. Rather, chili peppers are most often found in the condiments. One reason for that is that a local chili pepper, called the simojovel, is far too hot to use except very sparingly! Chiapan cuisine tends to rely more on slightly sweet seasonings in its main dishes. For example cinnamon, plantains, prunes and pineapple are often found in meat and poultry dishes.

The local Bailliages in Mexico continue to be very active meeting regularly to enjoy the ‘art de la table’. However, other cultural activities are not forgotten, this visit to the State of Chiapas being a good example.
