Bailliage of Madrid

The iconic Ritz Hotel was chosen by the Bailliage of Madrid for a ‘Summer is here!’ dinner. This was to celebrate its General Manager, Christian Tavelli becoming a Professional member of the Chaîne.

Gazpacho with crab and crispy ciabatta

Confit of duck with orange sauce and Dauphinoise potatoes

Sweet aloe vera with fresh passion fruit
Blood orange sorbet with strawberries




During the dinner, Pablo Bravo presented a copy of his book ‘Gastronomia en el Camino de Santiago’ to Bailli Délégué Amable Prieto Montero for the Bailliage of Spain’s library. The book explores the cuisine, the typical food products and wine that a pilgrim can find along the Camino de Santiago. The Camino is the pilgrimage route to the Cathedral of Santiago de Compostela in Galicia in North-west Spain where tradition has it that the remains of the apostle Saint James are buried.

Fantastic weather, the splendour of the Ritz’s terrace and the superb menu made for a very special evening welcoming the arrival of summer.
