Monaco Grand Chapitre

Autumn in Monaco on the Mediterranean coast holds on to a lovely summery feel, offering a very warm welcome for connoisseurs of fine food. The National Bailliage celebrated its 9th Grand Chapitre at the Méridien Beach Plaza.

Ideally located within walking distance of Monaco’s most famous tourist attractions, the Méridien Beach Plaza Hotel is the most restful place to stay in Monte Carlo, in a chic, contemporary atmosphere.

The organising committee had put together a wonderfully appealing programme:
- Dinner at the “Avenue 31” restaurant
- Inductions at the Méridien Beach Plaza Hotel, in the Atlantique room
- Gala Dinner and musical show at the Méridien Beach Plaza Hotel, in the Sea Club
- Farewell lunch at the “Le Virage” restaurant

On Saturday evening, with over 15 nationalities represented, a large number of members were inducted, including the Principality’s new Bailli Délégué, Mr Gérard Canarie. The Confrérie de la Chaîne des Rôtisseurs has had a presence in Monaco since 1993. Chancelier since 2008, Mr Canarie was appointed Bailli Délégué in 2013.

Mr Günter Albert, who founded Monaco’s Chaîne in 1993, is still involved as Honorary Bailli Délégué. He is also a member of the International Conseil d’Administration, and it was he who conducted the induction ceremony.

We were also delighted to welcome Mr Thierry Paludetto as Maître Rôtisseur. Mr Paludetto is the executive chef of the MRG Giraudi Group’s Avenue 31 restaurant, where the night before, guests had enjoyed a wonderful dinner sponsored by Taittinger Champagnes.

Members then took their places for the Gala Dinner conjured up by Chef Vandenameele. The menu included a marbled ingot of duck foie gras, scallops with black truffle, ballotine of free-range chicken with lobster, and a selection of Menton lemon desserts.

Throughout the festivities, Mr Dominique Milardi, Échanson, imparted valuable insights on the different wines that accompanied each dish. A musical interlude complemented the evening, with a trio composed of a pianist, a tenor and a soprano from the Opéra de Monaco.

This Grand Chapitre was faithful to the great principles of the Chaîne, centred on the spirit of camaraderie and fine dining.

The Monaco Confrérie now has 75 members who will be given the opportunity to enjoy plenty more culinary events in 2014.
