Bailliage of Hokkaido - Sapporo, March 20, 2012

The Chapitre and inaugural Annual General Meeting of the Bailliage of Hokkaido were held at the Sapporo Grand Hotel.

Bailli Délégué Saihei Makinami, in his capacity as a Member of the Conseil d’Administration, presided over the Induction Ceremony. Afterwards the General Meeting was held with Norio Ara, Bailli of Hokkaido, in the chair.




With the ceremonial and official formalities concluded, the celebration of the founding of the local Bailliage could begin. Firstly with a cocktail reception, then a Gala Dinner prepared by Tetsuya Koizumi, Executive Chef of the Sapporo Grand Hotel, and newly-inducted Vice-Conseiller Culinaire of Hokkaido.

He had conceived a special menu using only local produce from Hokkaido:

- Devilled herring
- Sansai (lit. ‘mountain vegetables’)
- Sea urchin flan with Ke-gani crab bisque
- Skate meunière
- Ginger granité
- Sautéed noisettes of venison
- Hokkaido cheeses
- Strawberry dessert surprise






The wines selected were also only from the region of Hokkaido. The 30 participants thoroughly enjoyed the autumnal rich crop from appetisers to desserts with wines.
