The Bailliage of Var at the Carlton in Cannes

On February 15th, the Carlton welcomed some thirty members and friends of the Chaîne, invited by Kriss Leroux, the Bailli of Var, to enjoy a stunning menu based on the theme of lobster. The hotel’s sumptuous interior provided the perfect backdrop which set the scene building the anticipation of what was to come.

Delicious canapés accompanied the champagne cocktails served on our arrival in the hotel’s majestic bar.

To the delight of the guests, these were followed by:

- A delicious appetiser composed of lobster ravioli, turnip mousseline and shell
  jus, served with a secret sauce

- Lobster tails, lobster rolls, aubergine caviar and sweet peppers with basil, drizzled with a delicate spring onion and caper vinaigrette

- For the main course, each guest was presented with a seared lobster, seasoned with fine spices and served with a selection of regional vegetables, and an olive broth with a celery puree garnished with a warm sauce

- “Carlton” lemon tart
(praline biscuit and blackberry nectar)

The traditional ceremony at the end gave the delighted guests the chance to express their appreciation to all the professionals who took part in the preparation of this delicious lunch, marking a very special moment for the Bailliage of Var.

The InterContinental Carlton Cannes is a luxury hotel built in 1911, located at 58 La Croisette in Cannes on the French Riviera.
